Baking sheets have two primary purposes:
- Keep pan clean (grease resistance)
- To ensure food does not stick to sheet and to ensure food will not break while separating from the paper. This is called “Release”
As baking sheets are introduced to heat, food grease and moisture penetrate the paper causing the release component to deteriorate. Grease, moisture and sugar test the limits of the paper so baking with those factors require a higher quality sheet. The number of bakes is an indication of how resistant and strong the paper is.
Bread is considered an “easy” release food while chicken wings, thawed frozen foods and sticky buns are considered “hard.” The “Cinnabun Test” is the golden standard for baking sheets where if the Cinnabun easily releases from a baking sheet, it is of high quality.
